Taco Salmon with Guacamole Topping

  • 4 Fresh Salmon Fillets (not steaks)
  • All-Natural Taco Seasoning
  • Extra Virgin Olive Oil

Lightly brush salmon fillets with olive oil and rub generously with taco seasoning. Set aside and prepare the Guacamole:

  • 2 Ripe Haas Avocados
  • Juice of ½ of 1 Lime
  • ½ Medium Sweet Onion, chopped fine
  • ½ to 1 small Jalapeno, seeds removed, chopped fine (to taste)
  • 1 Clove Fresh Garlic, chopped fine
  • 1 Small Vine-ripened Tomato, seeds removed, chopped fine
  • 5-8 Sprigs Fresh Cilantro, chopped fine (to taste)
  • 1 Tsp Sea Salt

Peel, pit and mash avocados with lime juice in glass bowl. Add other ingredients and mix well. Cover with plastic wrap and chill for at least 30 minutes.

Heat heavy skillet until hot. Add 4 Tblsp. olive oil. Add salmon fillets (they should sizzle as you are searing them) and cover skillet. Maintain medium-high to high heat. Sear for 2-3 minutes, turn fillets over. Recover skillet. Sear for another 2-3 minutes and remove skillet from the heat. Allow fillets to remain in the skillet for another 3-5 minutes. Remove fillets from the skillet and cover with aluminum foil. Allow to rest for 5-10 minutes. Serve with fresh guacamole topping.

Note: Use good quality cold-water salmon fillets for best results.
