Black Bean and Goat Cheese Quesadillas

Ingredients

  • 1Tbs. olive oil (organic)
  • 8 (8 in.) tortillas (organic)
  • 1 can Amy’s Organic Black Bean Chili
  • 1 tsp. olive oil (organic)
  • 1 (4oz) package goat cheese, crumbled
  • ½ c. Amy’s Fire Roasted Vegetable Salsa
  • 1/3 c. minced fresh cilantro, optional

Directions

  1. Heat 1 Tbs. Oil in skillet and add Black Bean Chili.  Mash slightly with a potato masher and remove from heat.
  2. Spread Black Bean Chili evenly over 4 tortillas.  Sprinkle the cheese and cilantro, if using, evenly on top of the chili. Top each with 1 tortilla, pressing gently.
  3. Heat ¼ tsp. olive oil in pan over medium-high heat.  Add quesadilla and cook for 2 minutes on each side.  Repeat with remaining olive oil and quesadillas.  Cut each quesadillas into 6 wedges.  Serve with Amy’s Fire Roasted Vegetable Salsa.
