Black Bean and Goat Cheese Quesadillas
Ingredients
- 1Tbs. olive oil (organic)
- 8 (8 in.) tortillas (organic)
- 1 can Amy’s Organic Black Bean Chili
- 1 tsp. olive oil (organic)
- 1 (4oz) package goat cheese, crumbled
- ½ c. Amy’s Fire Roasted Vegetable Salsa
- 1/3 c. minced fresh cilantro, optional
Directions
- Heat 1 Tbs. Oil in skillet and add Black Bean Chili. Mash slightly with a potato masher and remove from heat.
- Spread Black Bean Chili evenly over 4 tortillas. Sprinkle the cheese and cilantro, if using, evenly on top of the chili. Top each with 1 tortilla, pressing gently.
- Heat ¼ tsp. olive oil in pan over medium-high heat. Add quesadilla and cook for 2 minutes on each side. Repeat with remaining olive oil and quesadillas. Cut each quesadillas into 6 wedges. Serve with Amy’s Fire Roasted Vegetable Salsa.
